Chicken Cobb Salad

A lighter classic Cobb, perfect for lunch, or dinner 🙂

I used spring greens instead of iceberg

Clean lightened-up SIMPLE dressing:

Serves 4


  • 1/3 cup extra virgin olive oil
  • 4 Tbsp apple cider vinegar
  • 2 tsp fresh lemon juice
  • 1/2 tsp dry mustard
  • 1/2 tsp raw honey (optional)
  • 1/2 tsp minced garlic
  •  pinch of sea salt and fresh ground pepper

Whisk & serve immediately


Chicken Cobb Salad

Cobb Salad for 4:

  • 4 small chicken breasts (I seasoned with no-salt organic seasonings, black pepper, & fresh lemon while cooking.
  • 6 cups fresh spring greens
  • pinch of feta or blue cheese Crumbles for each plate
  • 4 strips nitrate-free bacon, crumbled {I use the brand ‎Applegate‬.}
  • 2 hard boiled eggs, cut into quarters
  • 4 organic Roma tomatoes, quartered
  • 1 large cucumber, sliced
  • 1 avocado, sliced

Layer & arrange equal portions on medium dinner plates, drizzle with the dressing above.
