Grilled Sweetcorn Salsa

A Summertime FAVORITE!  Try this one at your next outdoor party or family picnic!Grilled Sweetcorn Salsa RecipeMakes 4-6 servings

Ingredients:

  • 4 fresh, corn cobs (local/organic if possible)
  • 4 vine ripe tomatoes, diced
  • 2 fresh garlic cloves, minced
  • 1 red or green bell pepper, seeds removed and diced
  • 1 large avocado, diced
  • 1 jalapenio pepper, seeds removed and finely diced
  • 1/4 cup packed cilantro leaves, chopped
  • 1/4 cup fresh lime juice
  • sea salt and pepper to your taste
  • 1/4 cup crumbled feta cheese (optional)

Grilled Sweetcorn Salsa Ingredients

Instructions:

Preheat a very clean outdoor grill to high heat and lightly oil grates.

Grill the corn, turning occasionally, until it’s charred and cooked through, about 10 minutes total.

Once cooled a bit, cut the corn off the cob and place kernels in a large serving bowl.

Add the tomatoes, garlic, bell peppers, avocado, jalapeño pepper, cilantro, lime juice, sea salt, and pepper, then gently combine.

Crumble feta on top if desired to serve.
