Fresh Corn Salad

I am a Utah girl, which means FRESH local corn is a MUST!

Ingredients:

Dressing:

  • 1/2 cup apple cider vinegar
  • 2 Tbsp raw honey {optional}
  • 2 Tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper

Salad:

  • 2 cups organic baby arugula
  • 1 small jalapeño (seeds removed) finely diced (optional)
  • 2 Tbsp chopped fresh Basil
  • 4 Tbsp chopped fresh Parsley
  • 1 cup cherry or grape tomatoes, halved
  • 1 Orange bell pepper, diced small
  • 1 cup diced fresh cucumber
  • 1 small red onion, diced very small
  • 4 ears very fresh corn, kernels removed with knife.

Instructions:

Whisk all dressing ingredients, set aside.

Combine all Salad Ingredients immediately before serving.

Whisk dressing one more time, pour over salad, & gently toss.
