Garlic Herb Poached Chicken Breasts

Cook a batch of chicken to shred and to throw into salads and soups all week. I do this once or twice each week…couldn’t be easier!
Makes about 3-4 servings
- 3 chicken breasts (skinless and boneless), about 1 lb
- 3 fresh garlic cloves, peeled and smashed
- 1 bay leaf
- 2 sprigs of fresh rosemary
- 1 tsp whole peppercorns
- 1 tsp sea salt
