Sweet Meyer Lemon Coconut Macaroon Cookies
Refined Sugar-Free! Grain free!
Makes 12 Cookies:
Ingredients
- 2 cups unsweetened shredded coconut flakes (MUST use “Let’s do Organic” brand for this recipe)
- 2 egg whites
- Juice of 1 Meyer sweet lemon (Not as acidic as regular lemons)
- ¼ tsp vanilla extract
- 25 drops stevia (or your preferred sweetener)
Instructions:
Preheat oven to 350 degrees f. Coat cookie sheet with coconut oil (lightly)
Combine all ingredients very well with a fork. Smash into Tablespoon size balls (I use a Tablespoon cookie scoop) It’s VERY important to press together firmly, so they keep their shape & not crumble during baking.
Bake at 350 f for 12-13 minutes, just until sides begin to brown.
Enjoy! They are awesome!
