Spicy Sweet Potato Salad

Serves 8


  • 4 sweet potatoes, medium diced
  • 2 Tbs extra virgin olive oil
  • 1 pint cherry tomatoes, sliced into halves
  • 2 avocados, diced, & coated with 1 Tbs fresh lime juice
  • 1 cup black beans (rinsed if canned)
  • 1/2 cup plain greek yogurt
  • 1 Tbs favorite hot sauce (more or less depending on heat preference)
  • 1 tsp ground cumin
  • 1 Tbs apple cider vinegar sea salt and pepper to taste
  • 2 Tbs chopped fresh parsley, cilantro, or chives (use your fav)


Preheat oven to 425

Toss diced potatoes with olive oil

Roast potatoes on flat sheet pan (I line with foil) for about 30 minutes

In medium bowl whisk until combined well: yogurt, hot sauce, cumin, vinegar, fresh herbs, and salt & pepper.

Gently combine all ingredients in a large bowl

Sprinkle with a pinch of fresh herbs

Serve immediately or refrigerate covered
